How to Meditate: a Practical Guide by Kathleen McDonald is a book I highly recommend. It is very focused on Buddhist meditation--in particular, Tibetan or Mahayana Buddhist--but the meditations in there are very beautiful, simple to do, and would help people to learn more methods of meditation than counting breaths or the simple act of letting go thoughts.
These meditations are mostly visuals and mantra oriented, and may be better for those who have found other methods to not be useful for them.
