This is a great recipe for someone looking to either cut back on cholesterol and fat, eat a healthier diet in general or for someone who can't eat eggs due to allergies or by being vegan or lacto-vegetarian by choice.
I live for this stuff. No joke:
1 ½ pounds tofu, firm ½ cup eggless mayonnaise (I prefer Vegenaise) 2 red bell peppers, chopped finely (optional, I usually make without) 4 scallions (white and green parts), chopped finely 1 small carrot, finely shredded (optional, I usually make without) 3 Tbsp. chopped fresh parsley 2 stalks celery, finely chopped 1 tsp. onion granules (I use onion powder, up to you) ¼ tsp. turmeric 1 ½ tsp. garlic powder Black pepper, to taste 1 1/2 tsp. dill (also optional but I prefer it)
In a large bowl, mash tofu with a fork or potato masher (alternatively, you may wish to finely cube the tofu). Add remaining ingredients and mix well. The resulting savory treat is wonderful as a sandwich spread, served on crackers, or as a side salad.
I put these in low carb pita bread or between two pieces of multigrain bread with bean spouts.
