Potatoes with Rosemary Preparation: 5 minutes Cook: 15 minutes 4 Servings
1-1/2 Ibs. russet potatoes, peeled and cubed 2 tsp. unsalted butter (vegan or otherwise) 2 Tbs. fresh Misty Hills rosemary, crumbled
Cooking Instructions: Cover potatoes with water in a medium saucepan and bring to a boil. Lower heat. Cover saucepan and simmer 10-15 minutes or until potatoes are tender. Drain water. Add remaining ingredients and salt and pepper to taste. Toss gently and serve. Per serving: calories 169, fat 2.3g, 12% calories from fat, cholesterol 5mg, protein 3.0g, carbohydrates 35.Ig, fiber 2.86g, sodium 10mg.
