White Beans With Fresh Herb Dressing 20 minutes prep time Serves 4
2 cans white beans, rinsed and drained 1/4 c fresh thyme, minced 4 cloves garlic, sliced 1/4 c extra virgin olive oil 1/2 tsp red pepper flakes 2 Tbsp fresh lemon juice 1 c fresh parsley Salt to taste
Put drained beans in a bowl. In a small saute pan over low heat, cook thyme and garlic in olive oil just to soften. Add red pepper flakes and cook for a few seconds, remove from heat and add lemon juice. Pour over beans and gently toss. Add parsley just before serving. Serve warm or chill.
